Its name is a misnomer because it is neither a real Sole nor does it taste of lemon but it is actually a Flounder. Lemon Sole has delicate sweet white flesh and is best cooked simply either grilled or pan-fried and served with a light sauce. Our Lemon Sole is caught deep in the North sea and comes in approximately 250g fillets, 4 in a bag.

Lemon Sole is a very versatile fish and can be used in many different ways once it is caught and cleaned. It can be fried, baked, grilled or served as a main course over rice with vegetables or added to salads. It can also be served when roe is added as it tastes better when the roe has been separated from the fish and then boiled. Try serving with a chilled Sauvignon Blanc, Chenin Blanc or Pinot Grigio white wine.
