We have been in the Eel business since our establishment in 1946, so it is safe to say we know our Eels! These are American Eels, Anguilla Rostrata from Canada. Caught in the autumn, from a sustainable source, our Eels come whole and round, 500-600g each, gutted, for easier preparation. They have a relatively firm but still delicate texture, slightly chewy to the bite with a sweet taste, similar to Octopus but more tender.
